Victoria graduated from the University of Texas at Austin where she earned a bachelor’s degree in Nutrition and Dietetics. She then went on to complete a distance internship with Gulf Coast Dietetic Internship where she was able to curate her experience and rotations. Victoria is also certified in Motivational Interviewing, a goal directed counseling style designed to help individuals resolve internal ambivalence and harness the motivation to create positive behavior change. This evidence-based method improves treatment outcomes by supporting patients on their journey while strengthening their motivations and well-being. She has eight years of experience in nutrition and dietetics and has spent the majority of the last year learning about and teaching people about nutrition after bariatric surgery.
As someone who has lived with type 1 diabetes for over 20 years, Victoria has always had a love for food and nutrition. She has learned how to be understanding and compassionate, while still being able to help people reach their goals.
In her free time, Victoria loves to explore new places, try new foods and going to the beach. Recently, she and her husband have just moved back to the U.S. from South Korea. She currently lives in Raeford, North Carolina, with her husband and is enjoying exploring all of the places North Carolina has to offer.
